Zucchini Pancakes

(serves 4)
400 g (=0.9 lb) zucchini
20 g (=3 tbsp) flour
2 eggs
1 tsp sugar
100 ml (1/2 cup) sour cream
salt
vegetable oil
Directions
Coarsely grate zucchini. Blend together eggs and salt. Combine with zucchini, add flour and mix well.
Heat oil in a pan and fry pancakes until golden brown. Flip and cook the other side.
Serve with sour cream.
