Carrot Apple Salad

(serves 4)
150 g (=5.3 oz) carrots
100 g (=3.5 oz) apples
50 g (=0.4 cup) walnuts
Dressing:
1 tbsp honey
1 tbsp oil
1 tsp fresh lemon juice
salt, pepper
Directions
Peel and grate apples and carrots.
Chop and roast walnuts.
Blend together oil, honey, fresh lemon juice, salt and pepper.
Combine all ingredients in a bowl.
